We propose an enology with a cross-sectional look from the vine to the bottle, more preventive than curative enology, innovative and safe oenology and thus obtain more expressive wines. Our proposal is knowledge versus recipes. At AZ3, we propose innovative winegrowing solutions to overcome setbacks such as the oxidability, longevity, fruit, structure, harmony or color of the wine, effectively, respectfully and sustainably.
