SELECTYS® THIOL is ideal for making white and rosé wines with very intense and elegant thiolic aromas, characterized by their freshness and persistence of taste.

SELECTYS® THIOL is a Saccharomyces cerevisiae strain isolated in Italy and selected by the R&D department through an innovative genetic identification program.

Presentation

  • This strain contains the nucleotide sequence in the IRC7 gene, which encodes the production of the protein linked to the disclosure of thiols (β-lyase activity). Thanks to 3 years of tests in wine regions with wines rich in thiols, they have verified the ability to improve aromatic notes in these aromatic precursors.
  • Yeast & nbsp; Saccharomyces cerevisiae.
  • To obtain its maximum expression, it is recommended to ferment at temperatures (16-18 ºC).

Applications

It adapts to all grape varieties that have a thiolic potential.
