Levuline BRG

Intended for making aged white and red wines.

It gives wines roundness due to its high release of mannoproteins, reveals citric and floral aromas in white wines and black and ripe fruits in red wines

LEVULINE BRG YSEO® has been isolated, in the “terroirs” of Burgundy for its fermentative capacities and the aromatic and gustatory expression that it develops in the great red and white wines for aging.

  • Very important release of mannoproteins, which make the color stable due to the binding of anthocyanins with these macromolecules.
  • It surrounds the tannins giving a good balance in the mouth.

  • YSEO yeast (adapted to extreme oenological conditions).
  • Saccharomyces cerevisiae.
  • No sulfur production.
  • High glucanase activity.

Applications
