Traditional oxidative maturation in wooden containers differs from other alternative techniques due to its complexity.

This produces wines characterized by their shingle colour, softness and spiced aroma, marked by the oxidative evolution: sotolon, caramel, etc.

At AZ3Oeno we have updated this traditional technique with the addition of oak, O2 and lees to achieve the same results reducing the time needed to less than half.

Always respecting the complexity that this type of maturation gives the wines and significantly reducing decreases by evaporation.
