LEVULINE CHP is also recommended for the production of very delicate white wines, fermented at low temperatures (15 to 18ºC), thus developing notes of white flowers or citrus.

The great Mistress of the Champagne lands, a bio-resistant yeast capable of establishing itself quickly. Selected by the Comité Interprofessionel du vin de Champagne (CIVC), it has the ability to solve the problems of difficult fermentations. Respects the varietal typicity of the grape providing fresh, clean and intense aromas.

Applications

  • For sparkling wines, for base wine and for fermentation in the bottle.
  • It can be used in red wines with high alcoholic strength and in wines with cold pre-fermentation maceration.
