Oenococcus oeni lactic acid bacteria, the result of selection work carried out by ITV France.

This research program had the aim of selecting bacteria that demonstrate
powerful enological activity in difficult conditions and that develop qualitative organoleptic expressions.

Finding the best YEAST-BACTERIA pair is also an important factor that will determine part of the success of the result.
